Milan Truffle Season

Where to eat and buy it, from truffle aperitif to black truffle tiramisu.

Autumn is truffle season and in Italy people want to celebrate the arrival of the first cold with a nice tagliolini, raw meat and truffle dishes. While the 2017 year was complicated, 2018 turned out to be an excellent one for both the Piedmont white truffle and the black summer truffle. There are copious quantities at reasonable prices – where possible, that is. We are talking about €250 for 100 grams if you buy it, but obviously costlier at the restaurant. In most cases, you pay by weight, with every grating being carefully checked on a scale directly at the table. However, in this selection of popular restaurants the truffle comes at a fixed price per dish – no surprises.

The aperitif

Within an ancient palace, home of the first rail station in Milan and today the Hotel NH Milano Palazzo Moscova, you can eat truffles at Savini Tartufi. Many varieties are available here and you can choose between the Black truffle, Piedmont White truffle and White Tuber Magnatum Pico. The restaurant offers a variety of sophisticated dishes like pork fillet with lard, chards, baby carrots, homemade clementine chutney, lamb stuffed homemade ravioli pasta with provola cheese sauce and zucchini and (if desired) black truffle grating on the side. For dessert, truffle butter tiramisu, mascarpone and fresh truffle. As an aperitif or after dinner, cocktails are made with truffles, and, in the summer, you can sit in the courtyard.

Where to buy it

On the top floor of Rinascente, at the food hall, you can find certified truffles and many truffle products from the most renowned Piedmont and Tuscan-Emilian Apennine brands: truffle butter, truffle oil, truffle risotto and pasta and delicious pasta sauces. For a quick lunch, Rinascente offers a variety: a truffle sandwich at De Santis, with Valtellina bresaola, brie cheese, truffle oil, lemon, and pepper; for meat lovers, there’s the Garronese beef tartare with salmon egg and sour cream, black truffles, tomatoes, mozzarella and basil pesto, Piquillo peppers and mayonnaise at Be Steak. For a dinner with a view, Maio restaurant serves typical Piedmont plin ravioli, served with veal ragu, mushrooms and black truffle.

The all truffle menu restaurant

Truffles in a contemporary restaurant in the city centre: Tartufotto. Traditional products like Caponi Tagliolini, white truffle butter, Parmesan cream and when choosing a dish, you decide whether to add black or white truffles. A fixed price indicated in the menu for each dish, so no surprises at the end. The Fassona Tartar starts at €19, plus €29 or €44 for truffles. You spend around €100, black truffles included.

The cooking course

A truffle lounge located in the beautiful Palazzo Serbelloni. In addition to the à la carte menu, there are three tasting menus with white or black truffle, and a cocktail list that ranges from TruffOld Fashioned to Gin & Tonic al Tartufo. In the afternoon, cooking courses are held here. Each class lasts three hours, for only 5 participants and it’s also available in English. The masterclass is perfect for anyone who wants some first-hand experience with the techniques for working the precious tuber like a pro; how to recognise a good truffle, its features, how to store it and a practical second part where participants willget to know the secrets for preparing some dishes. At the end of the course participants will be able to taste their creations.

The fast food

Ten Grams is the first fast food dedicated to truffles, at affordable prices on via della Moscova in Milan. Dishes are decorated with a 10-gram fresh truffle grating. You can choose among tagliolini, baguettes, steak tartare served on toasted bread, salads, eggs and then black or white truffle or porcini mushrooms are added, to then enjoy on stools and at tables. Go for truffle fries, €5, for a starter and then truffle ice cream or cheese cake as dessert. A three-course meal costs around €35.
